「飲食業油煙排放控制技術及全球趨勢」調查摘要



商界環保協會受香港餐飲聯業協會委託,就飲食業油煙排放技術及全球趨勢進行市場調查。是項調查乃工業貿易署中小企業發展支援基金撥款支持項目「為本地中小企飲食業改善油煙排放及污染支援計劃」的其中一個部份 (參考編號: D05 005 051)。

。此摘要描述是項市場調查的目的、結果及建議,提供最先進環境及污染控制技術資料,並加剖析這些技術是否能應用於本地飲食業。

是項調查由商界環保協會負責,調查方法包括:於互聯網網上搜尋,聯絡本地及海外政府及專業組織。為了今次調查,商界環保協會更特別向重要合作夥伴 – 各國駐本港領事館 - 發出邀請信及問卷,希望他們能提供協助,給予該國最新的環境技術資訊,尤其有關處理油煙排放方面,讓本港業界可作參考。

是項市場調查共派發了45份問卷,並一共收回21份,回收率達47%。總括而言,常見及成熟的商業性油煙污染控制技術,皆廣泛地運用於香港飲食業。當中包括:



● 油隔
● 灑水式煙罩[運水煙罩]
● 空氣清洗器
● 靜電除塵器
● 文丘里式洗滌器
● 填充塔式洗滌器
● 活性碳隔濾器


是項調查中亦發現一些較新的科技,如:低溫等離子體催化復合技術、紫外光技術等。然而,這些新科技應用於香港在商業環境上的可行性暫時未能證實。

A survey on the global trend and technologies for cooking fume emission from restaurant trade under the Project for the Trade and Industry Department (TID) SME Development Fund (SDF) [工業貿易署「中小企業發展支援基金」]Ref: D05 005 051, “Implementation and Support Programme for Mitigation and Control of Cooking Fume Emissions from Restaurant Trade SMEs and Catering Industry in Hong Kong”[「為本地中小企飲食業改善油煙排放及污染支援計劃」]was conducted by the Business Environment Council (BEC) on behalf of the Hong Kong Federation of Restaurants and Related Trades [香港餐飲聯業協會].This summary describes the approach and results of market research on state-of-the-art environmental and pollution control technologies suitable and available for the local restaurant trade.

BEC Consultants conducted a market research on environmental and pollution control technology mainly via a web-based searching and contacting both local and overseas governmental and professional bodies.In particular, invitation letters and questionnaire surveys were sent to consulates from different countries, who are also partners of BEC, in order to seek their help in providing some useful information on the latest environmental technologies especially for cooking fume emissions from their respective country.

A total of 45 questionnaires were sent out and the response rate is 47%.In summary, all of the commercially mature pollution control technologies are available and widely used by the restaurant trade in Hong Kong.These are:



● Grease Filters (油隔)
● Hydro-vent (灑水式煙罩[運水煙罩])
● Air-washers (空氣清洗器)
● Electrostatic precipitators (EP) (靜電除塵器)
● Venturi-Scrubber (文丘里式洗滌器)
● Packed Tower Scrubber (填充塔式洗滌器)
● Carbon Filters (活性碳隔濾器)


Newer technologies have been identified in the survey such as Low-temp Plasma Catalysis (低溫等離子體催化復合技術) and ultra-violet (UV) technologies.However, these technologies have not demonstrated the commercially viability in Hong Kong.
